When people think of Khmer food the first dish that comes to mind is Amok. Traditionally, Amok is made by combining cubes of fish, coconut cream, leafy greens, kroeung and prahok and wrapping it in a parcel made from banana leaves. These days, however, every cook has his or her own version of this quintessential Khmer dish, but I have to admit, of all the amok's I've ever eaten mum's is definitely the best.
